Maple Roasted Pumpkin Seeds

Pumpkin seeds aren’t just for fall anymore! These maple roasted pumpkin seeds are not only easy but make great snacks, salad toppers, and soup toppers, and they are even perfect in your next grain bowl.

Equipment

Ingredients

  • 1 cup Pumpkin Seeds

  • 1/2 – 1 tsp Avocado Oil

  • 1 tbsp Pure Maple Syrup

  • 1/2 tsp Smoked Paprika

  • 1/4 tsp Ground Cumin

  • 1/8 to 1/4 tsp Cayenne Pepper

  • 1/4 tsp Coconut Aminos (optional)

  • 1/2 – 1 tsp Sea Salt

Directions

  • Preheat oven to 325 degrees. In an oven-proof skillet, warm avocado oil over medium heat and saute the pumpkin seeds until lightly golden, about 3-5 minutes.
  • In a small bowl, combine maple syrup, smoked paprika, ground cumin, and cayenne. Take the skillet off the heat and sirt in the maple syrup spice mixture.
  • Transfer skillet to the oven and roast for about 20-30 minutes, stirring occasionally to make sure they don’t burn. Taste the seeds to make sure they are crispy throughout and not soft in the center. Continue cooking if necessary.
  • When finished, tip the seeds out onto a baking sheet covered with parchment paper and cool. Sprinkle with sea salt to taste while still hot.
