Ingredients

  • 3 lbs Gold Potatoes

  • 2 Tbs Avocado Oil

  • 6 Cloves Garlic, fresh, minced

  • 10-12 sprigs Fresh Thyme

  • Sea Salt and Black Pepper for Taste

Directions

  • Roughly cut potatoes into cubes and place them in a saucepan. Fill the saucepan with enough water to have 1-2 inches of water above the top of the potatoes. Add a generous pinch of sea salt, cover pan, and bring water to a boil over medium-high heat.
  • Once boiling, turn the heat down a bit and simmer for 10-15 minutes until the potatoes are fork-tender.
  • While potatoes are cooking, remove thyme leaves from the sprigs and gently mince leaves.
  • Once the potatoes are cooked, use a glass measuring cup to scoop out at least 1 to 1 1/2 cups of potato water from the saucepan before draining the potatoes. Drain the potatoes.
  • In the same saucepan, heat oil over medium-low heat. Once oil is heated, add garlic and stir frequently for 3-4 minutes. You want the garlic to soften and become fragrant but not burn. Add thyme and cook for 1-2 minutes more.
  • Place potatoes back into the saucepan, sprinkle with sea salt and pepper, add about 1/4 cup of reserved potato water, and mash the potatoes with potato masher. Continue to add potato water, salt, and pepper until you’ve reached the desired consistency and flavor.

Notes

  • For a higher fat option, use a nut milk or coconut milk instead of potato water.
