No Bad Oils

I’ve tried finding frozen fries without the dreaded words “canola oil” or another highly processed oil, but it’s nearly impossible. And if I find some, it’s seemingly more expensive per serving than a steak dinner. Why not make these with healthy oil like pure avocado or olive oil, grab whatever herbs you like, and avoid all the health issues down the road that you get with highly processed oils?

One of the best things about Avocado Oil is that it tastes buttery. So it works fantastic as a butter replacer. Another amazing fact is it’s one of the healthiest oils you can use. Rich in oleic acid and vitamin E, avocado oil is an excellent fat source and easy to digest. Avocado oil is known to increase heart and eye health. And it’s got a mild flavor, so it goes well with almost everything.

Garlic, the Healer

Although the recipe below calls for garlic powder, you can go crazy and use minced fresh garlic for an extra boost of anti-bacterial and disease-fighting properties. You know you’ve seen restaurants do it, you can too. When you do your final turn of the potatoes, throw in 3-4 cloves of fresh minced garlic (no, not the jarred stuff), and you’ll increase the pro chef vibes.

I had to look for healing foods when I fell ill with multiple chronic conditions and symptoms just a few years ago. When I realized that my kids would benefit from this type of eating, why wouldn’t I look for kid-friendly options that we could enjoy together? These garlic herb fries do the trick, many times more than once a week.

Herbs, Herbs, the Magical Herbs

The more you eat, the more you…? Heal, is what I say. It doesn’t rhyme like the same song for beans, but you catch my drift. Herbs are healing. Whether dried or fresh, you get many antioxidants and gut-healing qualities.

Ever wonder why they used parsley as that garnish back in the day? Parsley alone gives benefits such as reducing bloating and high blood pressure. So go for it and put it on everything!

Chives and potatoes are a classic combo, and chives will give you a good amount of Vitamin C and Vitamin K. Another little innocent herb you can sprinkle into your life.

Garlic Herb Fries, the Potato’s Shining Moment

Like what you put on these fries, the potato has healing properties that many diets have shunned today. The potato is not the problem; the dairy, fat, cheese, and oils give the potato a bad name. Very little oil is used in these garlic herb fries, and yes, you can even make these fat-free and skip the oil altogether.

The humble potato is amazing for many reasons, including what is in the skin. Potato skins contain amino acids, proteins, and nutrients that can help with digestion, liver health, and more.

Side Dish for All

And I mean all. You can make a small batch of these garlic herb fries for 1 or 2 people or double it for even more. Serve these with my Oil-Free Lemon Chicken, or keep it vegan with a Cashew Cheese Sauce.

Equipment

Ingredients

  • 1 bag Fingerling Potatoes, or 1.5 lbs Gold Potatoes

  • 1 -2 tbsp Pure Avocado or Olive Oil

  • 2 tsp Garlic Powder

  • 2 tsp your favorite Dried Spices – thyme, Italian Seasoning, Old Bay, oregano, etc

  • 1 tbsp Chopped Fresh Parsley or Chives, optional

  • Salt and Pepper to taste

Directions

  • Move the oven rack to close to the top position. Preheat oven to 400 degrees.
  • Slice fingerling potatoes in 1/2 lengthwise. If using larger gold potatoes, cut them in half and then slice diagonally to make wedge fries. Mix potatoes, oil, garlic powder, favorite dried spices, salt, and pepper in a large bowl. Be sure to coat the potatoes.
  • Spread on a sheet pan, and bake cut-side down for 15 minutes. If using wedge potatoes, turn them. Continue to bake on top rack for another 10-12 minutes until browned and crispy.
  • Sprinkle parsley or chives over potatoes and serve.

Notes

  • Toss with fresh minced garlic at the turning point for more garlic goodness.
